Ingredients:For the Broth:1 tbsp coconut oil (or neutral oil)1 stalk lemongrass (bruised, cut into 3\u2033 pieces)3 kaffir lime leaves (or 1 tbsp lime zest + 1 bay leaf)1-inch ginger (sliced)3 garlic cloves (minced)1 shallot (thinly sliced)1-2 Thai chilies (or 1 tbsp chili paste) 1 red bell pepper (thinly sliced) 4 oz shiitake mushrooms (sliced) 1 can (13.5 oz) coconut milk (full-fat for creaminess)3 cups seafood or veggie broth2 tbsp fish sauce (or soy sauce)1 tbsp palm sugar (or brown sugar)1 tbsp lime juice (plus wedges for serving)For the Noodles &amp; Protein:8 oz rice noodles (or vermicelli)1 lb large shrimp (peeled, deveined) 2 cups baby spinach (or bok choy)Garnishes: Fresh cilantro, Thai basil, chopped peanuts, chili oil Instructions:1\ufe0f\u20e3 Prep noodles: Cook rice noodles per package instructions.
