Ingredients<\/mark><\/strong><\/p>\n\n\n\n

1 \u00bd cups all-purpose flour
3 large eggs
1 cup milk
\u00bd cup Greek yogurt or sour cream
2 cups fresh spinach, chopped
1 tsp baking powder
1 tsp salt
\u00bd tsp black pepper
1 cup shredded mozzarella cheese (divided)
1 cup shredded cheddar cheese (divided)
4 tbsp butter, cubed<\/p>\n\n\n\n

Instructions<\/mark><\/strong><\/p>\n\n\n\n

Preheat the Oven: Preheat your oven to 350\u00b0F (175\u00b0C) and lightly grease a 9\u00d713-inch baking dish.<\/p>\n\n\n\n

Prepare the Spinach: In a large pan, saut\u00e9 the chopped spinach in a little oil over medium heat until wilted, then set it aside.<\/p>\n\n\n\n

Mix the Wet Ingredients: In a bowl, whisk together the eggs, milk, and yogurt until smooth and well combined.<\/p>\n\n\n\n

Combine Dry Ingredients: In a separate bowl, mix the flour, baking powder, salt, and pepper.<\/p>\n\n\n\n

Create the Batter: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the saut\u00e9ed spinach and half of the shredded mozzarella and cheddar cheese.<\/p>\n\n\n\n

Assemble the Dish: Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle the remaining cheese over the top, then dot the top with the cubed butter.<\/p>\n\n\n\n

Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.<\/p>\n\n\n\n
