Lemon Cream Cheese Swirl Loaf Cake

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

In a large mixing bowl, combine the yellow cake mix, vanilla pudding mix, eggs, milk, crushed pineapple, and sugar. Mix until well combined.

Pour the batter into the prepared baking pan, spreading it evenly.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking, prepare the frosting. In a separate mixing bowl, beat together the cream cheese, butter, confectioner’s sugar, pecans (if using), and vanilla essence (if using) until smooth and creamy.

Once the cake is baked and cooled, spread the frosting evenly over the top.

Slice and serve the cake, enjoying the tropical twist of flavors inspired by the king of rock and roll himself!
