Ingredients
1 cup almond flour
1/4 cup cocoa powder
1 cup shredded coconut
1/4 cup maple syrup
1/4 cup coconut oil, melted
1/2 tsp vanilla extract
Pinch of salt
For the Chocolate Topping:
1 tbsp coconut oil
1/2 cup dark chocolate chips
Instructions
Prepare the Base:
In a mixing bowl, combine shredded coconut, almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt.
Mix until well combined and the mixture holds together when pressed.
Press into Pan:
Line a square baking pan with parchment paper.
Press the mixture firmly and evenly into the bottom of the pan using your hands or the back of a spoon.
Make the Chocolate Topping:
In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips and coconut oil together until smooth.
Assemble:
Pour the melted chocolate mixture over the coconut base, spreading it evenly with a spatula.
Chill and Serve:
Place the pan in the refrigerator for at least 1 hour, or until the chocolate is set.
Once set, lift the bars out of the pan using the parchment paper and cut into squares or bars.
