Ingredients:
- Peels from 2 organic lemons (washed thoroughly)
- 3–4 cups water
- Optional:
- 1 tsp honey or maple syrup (for sweetness)

Instructions:
- Prepare the lemon peels:
- Wash the lemons thoroughly (use organic if possible).
- Peel the lemons using a knife or vegetable peeler, avoiding too much of the white pith (which can be bitter).
- Boil the water:
- Bring 3–4 cups of water to a boil in a saucepan.
- Add lemon peels (and optional ingredients):
