Potato and Turkey Bacon Soup with Cheesy Toast

Ingredients

For the Soup:

1 tablespoon olive oil

6 slices of turkey bacon, chopped

1 onion, diced

3 garlic cloves, minced

4 large potatoes, peeled and diced

4 cups chicken or vegetable broth

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

1 cup heavy cream or milk (optional, for creaminess)

For the Cheesy Toast:

4 slices of crusty bread (like sourdough or baguette)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

1 tablespoon butter (optional, for extra richness)

Instructions

1. Prepare the Soup

Cook the Turkey Bacon

Heat the olive oil in a large pot over medium heat.

Add the chopped turkey bacon and cook until crispy. Remove and set aside, leaving the rendered fat in the pot.
