Crispy Bacon-Wrapped Potato Bites

Ingredients:

  • 15 baby potatoes (or small Yukon Gold potatoes)
  • 15 slices of bacon (halved crosswise)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toothpicks (to secure the bacon)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it.
  1. Prepare the Potatoes:
  • Wash the baby potatoes thoroughly and pat them dry.
  • In a large bowl, toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper to coat evenly.
  1. Wrap with Bacon:
  • Take a half slice of bacon and wrap it tightly around each potato.
  • Secure the bacon with a toothpick if necessary.
  1. Bake:
  • Place the wrapped potatoes on the prepared baking sheet, seam side down.
  • Bake for 35-40 minutes, turning halfway through, until the bacon is crispy and the potatoes are tender when pierced with a fork.
  1. Serve:
  • Remove from the oven and let cool slightly before serving.
  • Serve with your favorite dipping sauces, like ranch, sour cream, or barbecue sauce.

Tips:

  • For added flavor, sprinkle grated Parmesan cheese over the potatoes before baking.
  • Use turkey bacon as a lighter alternative.
