I made a mistake by only using half of the recipe. The food was eaten quickly!

Ingredients

  • 2 large apples, peeled, cored, and chopped into small pieces
  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup dark brown sugar
  • 2 tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ½ tsp salt
  • ⅔ cup milk
  • 2 eggs, lightly whisked
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Powdered sugar (optional, for sprinkling)

Instructions

1. Prepare Your Oven

  • Preheat the oven to 350°F (175°C).
  • Lightly grease a baking sheet or line it with parchment paper.

2. Mix the Dry Ingredients

  • In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.

3. Mix the Wet Ingredients

  • In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.

4. Combine the Batter

  • Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Don’t overmix; small lumps are fine.
  • Fold in the chopped apples until evenly distributed.

5. Shape and Bake

  • Drop about ¼ cup of batter for each fritter onto the prepared baking sheet, leaving space between each.
  • Bake for 15–20 minutes, or until golden brown and the centers are set.

6. Cool and Serve

  • Allow the fritters to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • Dust with powdered sugar, if desired, and serve warm.

Variations and Tips

  • For picky eaters: Use their favorite apple variety to enhance flavor.
  • Add texture: Stir in chopped nuts for crunch.
  • Dairy-free option: Replace milk with almond or oat milk.
  • Cozy spices: Add a pinch of nutmeg or allspice for extra warmth.
  • Freezer-friendly: Cool completely, then store in an airtight freezer bag for up to 3 months. Reheat in the oven before serving.
  • Drizzle option: Make a simple glaze with powdered sugar and milk for a sweet finishing touch.
