Ingredients:1 lb shrimp, peeled and deveined12 oz smoked sausage, sliced2 ears corn, cut into small rounds1 lb baby potatoes, halved1 bell pepper, sliced2 tbsp olive oil2 tsp Old Bay seasoning (or Cajun seasoning)1 tsp garlic powderSalt & pepper to taste1 tbsp butter per packetFresh parsley & lemon wedges (for garnish)Instructions:Preheat grill to medium-high or oven to 400°F (200°C).Boil potatoes for 5 minutes to soften slightly. Drain.Toss shrimp, sausage, corn, potatoes, and bell pepper with olive oil, seasoning, garlic powder, salt, and pepper.Divide mixture onto large foil sheets. Add a pat of butter on top of each.Fold foil into sealed packets.Grill for 10-12 minutes or bake for 15-20 minutes until shrimp is pink and cooked through.Garnish with parsley and a squeeze of lemon before serving.Note: Feel free to customize this recipe with your favorite vegetables, such as zucchini or mushrooms. You can also adjust the seasoning to your spice preference. If using frozen shrimp, make sure to thaw them first for even cooking.
