Ingredients:

  • 2 handfuls of fresh purslane (washed and trimmed)
  • 1 medium onion, finely chopped
  • 1-2 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 2–3 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: a squeeze of lemon or spoon of plain yogurt to serve

Instructions:

  1. Heat olive oil in a pan and sauté the onion until soft.
  2. Add garlic and cook for 30 seconds.
  3. Add diced tomatoes and cook until they break down into a light sauce.
  4. Add the purslane and stir gently. Let it wilt and cook for 5–7 minutes.
  5. Season with salt and pepper. Optional: drizzle with lemon or serve with a spoon of yogurt on the side.
