Smoked Salmon & Scrambled Egg Toast

Ingredients:

10 eggs

4 slices of sandwich bread (or your favorite toast)

Butter (for cooking)

4 slices of smoked salmon

Salt and black pepper (to taste)

Fresh parsley (optional, for garnish)

Lemon wedge (optional, for serving)


Instructions:

Toast the Bread
Toast the slices of bread until golden and slightly crispy.

Scramble the Eggs
In a bowl, beat the eggs with a pinch of salt and pepper.
In a non-stick pan, melt some butter over medium-low heat.
Pour in the eggs and stir gently with a spatula until softly scrambled and creamy.

Assemble the Tartines
Spread the scrambled eggs over the toasted bread.
Top each slice with a piece of smoked salmon.
Garnish with chopped parsley and a squeeze of lemon juice if desired.
