Ingredients
1 cup shredded mozzarella or cheddar cheese
1 medium head of cauliflower, chopped into small florets
2 eggs, lightly beaten
½ cup all-purpose flour (or almond flour for a low-carb option)
2 tablespoons chopped fresh parsley (or cilantro)
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
Olive oil or vegetable oil for frying
Instructions
Cook the Cauliflower: Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain and mash the cauliflower with a fork or potato masher, leaving some small chunks for texture.
Mix Ingredients: In a large bowl, combine the mashed cauliflower, shredded cheese, eggs, flour, parsley, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed and forms a thick batter.
Form Fritters: Take about 2 tablespoons of the mixture and shape it into small patties. Repeat until all the batter is used up.
Fry the Fritters: Heat a thin layer of oil in a large skillet over medium heat. Place the fritters in the skillet, a few at a time, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side, or until golden brown and crispy.
Drain and Serve: Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve warm with a dipping sauce of your choice, such as sour cream or a garlic aioli.
