Tropical dessert with coconut and pineapple

★Ingredients

1 cup crushed pineapple, drained

1 can (14 oz) coconut milk

1/2 cup shredded coconut (sweetened or unsweetened)

1 tsp vanilla extract

1/4 cup honey or maple syrup

A pinch of salt

Fresh mint leaves (optional, for garnish)

★Instructions

  • Mix Ingredients*
  • In a mixing bowl, combine the coconut milk, crushed pineapple, shredded coconut, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix well until everything is evenly incorporated.
  • Chill*
  • Transfer the mixture to serving bowls or glasses. Refrigerate for at least 2 hours or until it’s chilled and slightly set.
  • Serve*
  • Before serving, you can garnish with fresh mint leaves if desired.
