1/2 cup all-purpose flour
1 pre-baked 9-inch pie crust
1 cup granulated sugar
2 cups full-fat milk
1/2 cup creamy peanut butter
1/2 teaspoon salt
3 egg yolks, beaten
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
2 tablespoons powdered sugar
1 cup whipped cream
Optional: Chopped tupeanuts or chocolate shavings for garnish
★Instructions
- Combine Dry Ingredients*
- In a medium saucepan, combine the flour, granulated sugar, and salt.
- Add Milk*
- Gradually add the milk to the dry ingredients, stirring constantly to avoid lumps.
- Cook the Mixture*
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1-2 minutes, then remove from heat.
- Temper the Egg Yolks*
- Slowly add a small amount of the hot mixture to the beaten egg yolks, stirring constantly to temper the yolks. Then, return the egg yolk mixture to the saucepan.
- Finish Cooking*
- Cook for another 2-3 minutes over medium heat, stirring constantly, until the mixture is thick and smooth.
- Add Peanut Butter and Butter*
- Remove the saucepan from heat and stir in the peanut butter, unsalted butter, and vanilla extract until well combined.
- Cool the Filling*
- Pour the filling into the pre-baked pie crust. Allow it to cool to room temperature, then refrigerate until set, about 2-3 hours.
- Prepare Whipped Cream*
- In a medium bowl, whip the cream and powdered sugar together until stiff peaks form.
- Top the Pie*
- Spread or pipe the whipped cream over the chilled pie.
