Peanut butter cream pie with Amish flavors

★Ingredients

1/2 cup all-purpose flour

1 pre-baked 9-inch pie crust

1 cup granulated sugar

2 cups full-fat milk

1/2 cup creamy peanut butter

1/2 teaspoon salt

3 egg yolks, beaten

2 tablespoons unsalted butter, softened

1 teaspoon vanilla extract

2 tablespoons powdered sugar

1 cup whipped cream

Optional: Chopped tupeanuts or chocolate shavings for garnish

★Instructions

  • Combine Dry Ingredients*
  • In a medium saucepan, combine the flour, granulated sugar, and salt.
  • Add Milk*
  • Gradually add the milk to the dry ingredients, stirring constantly to avoid lumps.
  • Cook the Mixture*
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1-2 minutes, then remove from heat.
  • Temper the Egg Yolks*
  • Slowly add a small amount of the hot mixture to the beaten egg yolks, stirring constantly to temper the yolks. Then, return the egg yolk mixture to the saucepan.
  • Finish Cooking*
  • Cook for another 2-3 minutes over medium heat, stirring constantly, until the mixture is thick and smooth.
  • Add Peanut Butter and Butter*
  • Remove the saucepan from heat and stir in the peanut butter, unsalted butter, and vanilla extract until well combined.
  • Cool the Filling*
  • Pour the filling into the pre-baked pie crust. Allow it to cool to room temperature, then refrigerate until set, about 2-3 hours.
  • Prepare Whipped Cream*
  • In a medium bowl, whip the cream and powdered sugar together until stiff peaks form.
  • Top the Pie*
  • Spread or pipe the whipped cream over the chilled pie.

Garnish*

If desired, garnish with chopped peanuts or chocolate shavings.
