Avocado Toast with Soft-Boiled Eggs

Ingredients

  • 2 slices of bread (sourdough or your favorite)
  • 1 ripe avocado
  • 2 eggs
  • 1 tsp lemon juice
  • Salt, to taste
  • Black pepper + chili flakes (for topping)

Instructions

  1. Cook the eggs
    • Bring a pot of water to boil.
    • Gently add the eggs and cook for 6–7 minutes for soft-boiled.
    • Remove, cool in cold water, then peel and slice.
  2. Prepare the avocado
    • Mash the avocado in a bowl with lemon juice and a pinch of salt.
  3. Toast the bread
    • Toast the bread slices until golden and crisp.
  4. Assemble
    • Spread mashed avocado over each toast.
    • Layer the sliced eggs on top.
    • Sprinkle with black pepper and chili flakes.

Enjoy immediately while warm!
