Ingredients
- 2 slices of bread (sourdough or your favorite)
- 1 ripe avocado
- 2 eggs
- 1 tsp lemon juice
- Salt, to taste
- Black pepper + chili flakes (for topping)
Instructions
- Cook the eggs
- Bring a pot of water to boil.
- Gently add the eggs and cook for 6–7 minutes for soft-boiled.
- Remove, cool in cold water, then peel and slice.
- Prepare the avocado
- Mash the avocado in a bowl with lemon juice and a pinch of salt.
- Toast the bread
- Toast the bread slices until golden and crisp.
- Assemble
- Spread mashed avocado over each toast.
- Layer the sliced eggs on top.
- Sprinkle with black pepper and chili flakes.
Enjoy immediately while warm!
