Instructions
Step 1: Prepare the Crust
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and a pinch of salt.
- Press the mixture firmly into the bottom of the prepared pan to form an even crust.
- Bake for 10 minutes, then remove from oven and let cool slightly.
Step 2: Make the Filling
- In a separate bowl, whisk egg yolks until slightly thickened and pale yellow.
- Add sweetened condensed milk and mix until smooth.
- Stir in lime juice and zest, mixing until fully combined.
Step 3: Assemble and Bake
- Pour the lime filling over the cooled crust.
- Bake for 15–18 minutes, or until the center is set but still slightly jiggly.
- Remove from the oven and let cool to room temperature.
- Refrigerate for at least 3 hours, preferably overnight, to fully set.
Step 4: Slice and Serve
- Use the parchment overhang to lift the bars out of the pan.
- Slice into squares or rectangles using a sharp knife.
- Garnish with whipped cream, lime zest, or a dusting of powdered sugar.
