2 packages (8 ounces each) cream cheese, softened
1 can (20 ounces) crushed pineapple, well-drained
2 cups shredded sharp cheddar cheese
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
1/2 teaspoon garlic powder
1/4 cup finely chopped green onions
1/4 teaspoon salt
1/2 cup chopped pecans
1/4 teaspoon black pepper
1 cup shredded sweetened coconut (optional, for coating)

- Prepare Ingredients*
- Drain the crushed pineapple thoroughly to remove excess moisture.
- Finely chop the green bell pepper, red bell pepper, and green onions.
- Chop the pecans.
- Mix the Ingredients*
- In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until well blended.
- Add the drained crushed pineapple, chopped green and red bell peppers, green onions, chopped pecans, garlic powder, salt, and black pepper. Mix until all ingredients are evenly incorporated.
- Shape the Cheese Balls*
- Divide the mixture into small portions and shape each portion into a ball. You can make them as small or as large as you prefer.
- If you like, roll each cheese ball in the shredded sweetened coconut to coat the outside.
- Chill*
- Place the cheese balls on a baking sheet or a large plate and cover them with plastic wrap.
- Refrigerate for at least 2 hours, or until firm.
- Serve*
- Once the cheese balls are chilled and firm, arrange them on a serving platter.
- Serve with crackers, sliced baguette, or fresh vegetables.
