Ingredients
1 cup all-purpose flour
1/4 cup ground flaxseed
2 cups whole wheat flour
1/4 cup rolled oats
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup honey or maple syrup
1 3/4 cups buttermilk or yogurt (room temperature)
1/4 cup melted coconut oil or olive oil
1 egg
Optional: seeds (like sunflower, pumpkin) for topping
Instructions
Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
In a large bowl, whisk together the whole wheat flour, all-purpose flour, ground flaxseed, rolled oats, baking powder, baking soda, and salt.
In another bowl, mix together the honey or maple syrup, buttermilk or yogurt, melted coconut oil or olive oil, and egg until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be thick and lumpy.
Pour the batter into the prepared loaf pan, spreading it out evenly. Sprinkle seeds on top if desired.
Bake for 45-55 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before slicing.
