Pasta with caramelized onions and cheese

★Ingredients

  • 3 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano (or 2 teaspoons fresh oregano)
  • 1/4 cup white wine (optional)
  • 1 cup freshly grated Parmesan cheese
  • 1 pound pasta (spaghetti, fettuccine, or your choice)
  • 1/2 cup pasta cooking water (reserved)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

★Instructions

  • Caramelize the Onions*
  • In a large skillet, heat the olive oil and butter over medium-low heat.
  • Add the sliced onions and cook, stirring occasionally, for about 20-30 minutes until they are golden brown and caramelized. Add the sugar halfway through to help with the caramelization.
  • Add Garlic and Herbs*
  • Stir in the minced garlic, thyme, oregano, and red pepper flakes if using. Cook for an additional 2-3 minutes until fragrant.
  • If using, pour in the white wine and let it cook down for about 5 minutes until the alcohol evaporates and the sauce is slightly reduced.
  • Cook the Pasta*
  • Meanwhile, cook the pasta according to package instructions in salted water until al dente.
  • Reserve 1/2 cup of the pasta cooking water before draining.
  • Combine Pasta and Onions*
  • Add the cooked pasta to the skillet with the caramelized onions.
  • Pour in the reserved pasta water and toss everything together until the pasta is well-coated with the onion mixture.
  • Add Parmesan*
  • Stir in the grated Parmesan cheese until it melts and creates a creamy sauce. Season with salt and pepper to taste.
  • Serve*
  • Divide the pasta into serving bowls and garnish with fresh parsley or basil. Add more Parmesan on top if desired.
