- 3 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon sugar
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano (or 2 teaspoons fresh oregano)
- 1/4 cup white wine (optional)
- 1 cup freshly grated Parmesan cheese
- 1 pound pasta (spaghetti, fettuccine, or your choice)
- 1/2 cup pasta cooking water (reserved)
- Salt and pepper to taste
- Fresh parsley or basil for garnish
★Instructions
- Caramelize the Onions*
- In a large skillet, heat the olive oil and butter over medium-low heat.
- Add the sliced onions and cook, stirring occasionally, for about 20-30 minutes until they are golden brown and caramelized. Add the sugar halfway through to help with the caramelization.
- Add Garlic and Herbs*
- Stir in the minced garlic, thyme, oregano, and red pepper flakes if using. Cook for an additional 2-3 minutes until fragrant.
- If using, pour in the white wine and let it cook down for about 5 minutes until the alcohol evaporates and the sauce is slightly reduced.
- Cook the Pasta*
- Meanwhile, cook the pasta according to package instructions in salted water until al dente.
- Reserve 1/2 cup of the pasta cooking water before draining.
- Combine Pasta and Onions*
- Add the cooked pasta to the skillet with the caramelized onions.
- Pour in the reserved pasta water and toss everything together until the pasta is well-coated with the onion mixture.
- Add Parmesan*
- Stir in the grated Parmesan cheese until it melts and creates a creamy sauce. Season with salt and pepper to taste.
- Serve*
- Divide the pasta into serving bowls and garnish with fresh parsley or basil. Add more Parmesan on top if desired.
