- 1 cup shredded cheddar cheese
- 2 cups broccoli florets, steamed and finely chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (or panko)
- 1 garlic clove, minced
- 2 large eggs, lightly beaten
- 1/4 teaspoon salt
- 1/4 cup green onions, finely chopped
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- Olive oil for frying
★Instructions
- Prepare the Broccoli*
- Steam the broccoli florets until tender (about 5-7 minutes). Drain well and chop finely.
- Mix the Ingredients*
- In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, Parmesan cheese, eggs, minced garlic, green onions, salt, pepper, and paprika. Mix until all ingredients are well incorporated.
- Form the Patties*
- Using your hands, shape the mixture into small patties, about 2-3 inches in diameter. Press them firmly so they hold together.
- Cook the Patties*
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once the oil is hot, place the patties in the skillet in batches, making sure not to overcrowd the pan.
- Cook each patty for about 3-4 minutes per side, or until they are golden brown and crispy on the outside.
- Serve*
- Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
- Serve warm, with your favorite dipping sauce or as a side dish.
