Buttered corn fritters.

★Ingredients

1/2 cup cornmeal

1 cup all-purpose flour

1/2 teaspoon salt

1 tablespoon baking powder

1 cup buttermilk

2 tablespoons sugar

2 tablespoons vegetable oil

1/4 cup water

1 cup fresh corn kernels (about 1 large cob)

2 tablespoons butter

Oil for frying

2 large eggs

★Instructions

Prepare Baking Sheet* Line a baking sheet with paper towels and place a rack on top. Set aside.

Mix Dry Ingredients* In a large bowl, whisk together the flour, cornmeal, baking powder, salt, and sugar.

Combine Wet Ingredients* In a separate bowl, whisk the buttermilk, water, vegetable oil, and eggs until well combined.

Combine Wet and Dry Ingredients* Pour the wet ingredients into the dry ingredients, mixing until just combined. Gently fold in the fresh corn kernels.

Heat Pan* Heat a cast-iron skillet or non-stick pan over medium to medium-high heat. Add a small amount of oil and a tablespoon of butter, allowing it to melt and heat up.

Cook Fritters* Drop spoonfuls of batter (about 2 tablespoons each) into the hot skillet. Flatten them slightly with the back of the spoon. Cook until golden and crispy on one side, then flip and cook the other side until golden and crispy. Transfer to the rack to drain.

Serve* Serve the fritters warm. They can be enjoyed with syrup for a sweet touch or alongside greens for a savory option.

Tips.

  • For extra flavor, you can add chopped herbs or spices to the batter.
  • If using frozen corn, thaw and drain it well before adding to the batter.
