Delicious and Simple South African Sausage (Wors) Stew

★Ingredients

  • 1 tablespoon (15 ml) olive oil
  • 500 g boerewors (or any sausage of your choice)
  • 1 large onion, chopped
  • 2 medium carrots, peeled and sliced
  • 2 cloves garlic, minced
  • 1 can (400 g) diced tomatoes
  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon (5 g) smoked paprika
  • 2 tablespoons (30 g) tomato paste
  • 1 teaspoon (5 g) ground cumin
  • 1 teaspoon (5 g) ground coriander
  • 2 cups (480 ml) beef or vegetable broth
  • 1 bay leaf
  • Fresh parsley, chopped, for garnish
  • Salt and pepper, to taste

★Instructions

  1. Brown the Wors
  • Heat olive oil in a large pot over medium heat. Add the boerewors (or any sausage) and cook until browned on all sides, about 5–7 minutes. Remove the sausage and set it aside.
  1. Cook the Vegetables
  • In the same pot, add the chopped onion and sauté for 3–4 minutes until softened.
  • Add the minced garlic and cook for 1 more minute until fragrant.
  1. Add Spices and Veggies
  • Stir in the carrots and potatoes, cooking for 2–3 minutes.
  • Add smoked paprika, ground coriander, and cumin, and mix well.
  1. Add Tomatoes and Broth
  • Pour in the diced tomatoes and tomato paste, stirring to combine.
  • Add the bay leaf, and pour in the broth. Season with salt and pepper.
  • Bring the mixture to a simmer, reduce heat, and cook covered for 25–30 minutes until the vegetables are tender.
  1. Finish with Wors
  • Slice the cooked boerewors into bite-sized pieces and add them back to the stew.
  • Let it simmer for another 10 minutes to allow the flavors to combine.
  1. Serve
  • Garnish with fresh parsley and serve hot with bread or rice.
