Delicious and Simple South African Sausage (Wors) Stew
★Ingredients
- 1 tablespoon (15 ml) olive oil
- 500 g boerewors (or any sausage of your choice)
- 1 large onion, chopped
- 2 medium carrots, peeled and sliced
- 2 cloves garlic, minced
- 1 can (400 g) diced tomatoes
- 2 medium potatoes, peeled and cubed
- 1 teaspoon (5 g) smoked paprika
- 2 tablespoons (30 g) tomato paste
- 1 teaspoon (5 g) ground cumin
- 1 teaspoon (5 g) ground coriander
- 2 cups (480 ml) beef or vegetable broth
- 1 bay leaf
- Fresh parsley, chopped, for garnish
- Salt and pepper, to taste
★Instructions
- Brown the Wors
- Heat olive oil in a large pot over medium heat. Add the boerewors (or any sausage) and cook until browned on all sides, about 5–7 minutes. Remove the sausage and set it aside.
- Cook the Vegetables
- In the same pot, add the chopped onion and sauté for 3–4 minutes until softened.
- Add the minced garlic and cook for 1 more minute until fragrant.
- Add Spices and Veggies
- Stir in the carrots and potatoes, cooking for 2–3 minutes.
- Add smoked paprika, ground coriander, and cumin, and mix well.
- Add Tomatoes and Broth
- Pour in the diced tomatoes and tomato paste, stirring to combine.
- Add the bay leaf, and pour in the broth. Season with salt and pepper.
- Bring the mixture to a simmer, reduce heat, and cook covered for 25–30 minutes until the vegetables are tender.
- Finish with Wors
- Slice the cooked boerewors into bite-sized pieces and add them back to the stew.
- Let it simmer for another 10 minutes to allow the flavors to combine.
- Serve
- Garnish with fresh parsley and serve hot with bread or rice.
