  • 1 cup cooked rice (white or brown)
  • 2 ½ cups all-purpose or whole wheat flour
  • 1 packet (7g) dry yeast
  • 1 teaspoon sugar (feeds the yeast)

  • ¾ cup warm water (more if needed)
  • 1 tablespoon olive oil (optional)

Instructions:

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let sit 5–10 minutes until foamy.
  2. In a large bowl, mash the cooked rice until soft.
  3. Add flour, salt, and the activated yeast mixture. Mix to form a dough.
  4. Knead for 8–10 minutes until smooth and elastic.
  5. Cover and let rise in a warm spot for 1 hour (until doubled in size).
  6. Shape into a loaf, place in a greased baking tin, and let rise again for 30 minutes.
  7. Bake at 180°C (350°F) for 30–35 minutes or until golden brown.
  8. Let cool before slicing. Enjoy warm or toasted!
