Soft, fluffy vanilla sponge cake that’s totally lightweight!

Ingredients:

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) vegetable oil or melted butter
  • 2 large eggs
  • 1 cup (240ml) milk
  • 2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round cake pan.
  2. Mix wet ingredients: In a large bowl, whisk together the sugar, oil (or butter), eggs, milk, and vanilla extract until smooth and well combined.
  3. Sift dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing gently until there are no lumps. Do not overmix.
  5. Pour into the pan: Pour the batter into the prepared pan and gently tap to remove any air bubbles.
  6. Bake: Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
  7. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
