Savory Pork Chops with Creamy Scalloped Potatoes

Ingredients

For the Pork Chops

1 tablespoon olive oil
Salt and pepper to taste
4 boneless pork chops
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
For the Scalloped Potatoes

4 large potatoes, thinly sliced
1 tablespoon butter
2 cloves garlic, minced
2 cups heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
Chopped parsley for garnish

Instructions

Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.

Season the pork chops with salt, pepper, garlic powder, paprika, and dried thyme on both sides.

Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream, salt, and pepper. Stir and let it simmer for 2-3 minutes until slightly thickened.

Layer half of the sliced potatoes in the greased baking dish. Pour half of the cream mixture over the potatoes. Sprinkle half of the shredded cheddar cheese on top. Repeat the layers with the remaining potatoes, cream mixture, and cheese.

Place the seared pork chops on top of the potato mixture in the baking dish.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender, and the pork chops are cooked through.
