Four 6-ounce fillets of cod
Salt and pepper, to taste
4 tablespoons unsalted butter
Juice of half a lemon
1 clove garlic, minced
1 tablespoon fresh dill, chopped

★Instructions
Prepare the Cod* Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
Heat the Pan*In a large skillet, heat the olive oil over medium-high heat until it shimmers but isn’t smoking.
Sear the Cod*Place the fillets in the skillet gently. Cook for about 4 minutes on each side, or until the bottom is golden and crispy.
Flip the Cod* Carefully flip the fillets using a spatula. Continue cooking for another 3 minutes, or until the fish flakes easily with a fork.
Remove and Keep Warm* Transfer the fillets to a foil-lined plate and keep them warm.
Make the Herb Butter Sauce* In the same skillet, reduce the heat to medium-low. Add the butter and garlic, stirring until the butter melts and the garlic becomes fragrant, about 1 minute.
Finish the Sauce* Remove the skillet from the heat. Stir in the lemon juice, parsley, dill, and chives.
Serve* Pour the herb butter sauce over the warm cod fillets. Serve immediately.
★Tips and Variations
Substitute the cod with other white fish like halibut or tilapia if desired.
For extra zest, add grated lemon zest to the sauce.
Dried herbs can be used if fresh herbs are unavailable; just use them sparingly.
