- 1/2 cup mayonnaise (adjust to taste)
- 2 cooked chicken breasts, shredded or diced
- 1/2 cup seedless grapes, halved
- 1 celery stalk, finely chopped
- 1/4 cup sliced almonds, toasted
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 teaspoon honey
- 4 large croissants, sliced in half
- Lettuce leaves (optional)
★Instructions
- Prepare the Chicken Salad*
- In a large bowl, combine the shredded or diced chicken, mayonnaise, Dijon mustard, and honey. Mix until well combined.
- Add the halved grapes, toasted almonds, and chopped celery. Gently fold everything together to keep the grapes intact.
- Season the mixture with salt and pepper to taste.
- Assemble the Sandwich*
- Open the croissants and, if desired, place a lettuce leaf on the bottom half of each croissant.
- Spoon a generous amount of the chicken salad onto the bottom half of each croissant.
- Close the croissants with the top halves.
- Serve*
- Serve the chicken sandwiches immediately, or wrap them up and refrigerate for later.
Tips*
- For a little extra flavor, you can add a teaspoon of lemon juice or some finely chopped fresh herbs like parsley or tarragon.
- If you like a bit of crunch, you can also add some chopped red onion or cucumber.
