Chicken Croissant Sandwich with Grapes and Almonds

★Ingredients

  • 1/2 cup mayonnaise (adjust to taste)
  • 2 cooked chicken breasts, shredded or diced
  • 1/2 cup seedless grapes, halved
  • 1 celery stalk, finely chopped
  • 1/4 cup sliced almonds, toasted
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1 teaspoon honey
  • 4 large croissants, sliced in half
  • Lettuce leaves (optional)

★Instructions

  • Prepare the Chicken Salad*
  • In a large bowl, combine the shredded or diced chicken, mayonnaise, Dijon mustard, and honey. Mix until well combined.
  • Add the halved grapes, toasted almonds, and chopped celery. Gently fold everything together to keep the grapes intact.
  • Season the mixture with salt and pepper to taste.
  • Assemble the Sandwich*
  • Open the croissants and, if desired, place a lettuce leaf on the bottom half of each croissant.
  • Spoon a generous amount of the chicken salad onto the bottom half of each croissant.
  • Close the croissants with the top halves.
  • Serve*
  • Serve the chicken sandwiches immediately, or wrap them up and refrigerate for later.

Tips*

  • For a little extra flavor, you can add a teaspoon of lemon juice or some finely chopped fresh herbs like parsley or tarragon.
  • If you like a bit of crunch, you can also add some chopped red onion or cucumber.
