Crunchy Caramel Chocolate Balls

★Ingredients

  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup crushed cornflakes or Rice Krispies
  • 2 tablespoons butter
  • 1 cup semi-sweet or milk chocolate chips
  • 1 teaspoon vanilla extract (optional)
  • Pinch of sea salt (optional)

★Instructions

  • Prepare the Caramel Base*
  • In a medium saucepan, melt the butter over low heat.
  • Add the caramel sauce and stir continuously until it’s smooth and heated through.
  • If using, add vanilla extract for an extra flavor boost.
  • Remove from heat.
  • Mix with Crunch*
  • In a large mixing bowl, add the crushed cornflakes or Rice Krispies.
  • Pour the warm caramel mixture over the crushed cereal.
  • Gently mix until all the cereal is coated evenly with the caramel.
  • Shape the Balls*
  • Using a small spoon or your hands, scoop out small portions of the mixture.
  • Roll them into balls, about 1 inch in diameter.
  • Place the balls on a parchment-lined baking sheet.
  • Chill*
  • Place the baking sheet in the refrigerator and let the balls chill for about 30 minutes or until firm.
  • Melt the Chocolate*
  • While the caramel balls are chilling, melt the chocolate chips in a microwave-safe bowl.
  • Heat in 20-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  • Coat the Balls*
  • Take the chilled caramel balls out of the refrigerator.
  • Dip each ball into the melted chocolate, using a fork to roll them around for an even coating.
  • Place them back on the parchment-lined sheet.
  • Optional Toppings*
  • Sprinkle a tiny pinch of sea salt on each ball while the chocolate is still wet, if desired.
  • Final Chill*
  • Let the chocolate-covered balls chill in the refrigerator for another 20-30 minutes, or until the chocolate is set.
  • Serve*
