Crispy German Potato Pancakes

★Ingredients

6 medium potatoes

2 large eggs

1 small onion

¼ teaspoon baking powder

2 tablespoons all-purpose flour

¼ teaspoon pepper

¼ cup vegetable oil (for frying)

½ teaspoon salt

Directions

Prepare Ingredients* Peel and grate the potatoes using a coarse grater. Place the grated potatoes in a clean cloth or paper towel and squeeze out as much moisture as possible. Finely chop the onion.

Mix Ingredients* In a large bowl, beat the eggs. Add the flour, baking powder, salt, and pepper, and mix until combined. Stir in the grated potatoes and chopped onion until well coated.

Heat Oil* Heat the vegetable oil in a large skillet over medium heat.

Cook Pancakes* Drop heaping tablespoonfuls of the potato mixture into the hot oil, pressing them down to flatten. Cook in batches, making sure not to overcrowd the skillet. Fry until the pancakes are golden brown and crispy, about 3 minutes per side.

Drain* Transfer the cooked pancakes to a paper towel-lined plate to drain excess oil.

Serve* Repeat with the remaining mixture. Serve hot with applesauce or sour cream.
