Spring Celebration Poke Cake Recipe


1 package (3 oz) flavored gelatin (such as strawberry, lemon, or lime)
1 cup boiling water
1 box (15.25 oz) white cake mix
Ingredients listed on cake mix box (eggs, oil, water)
1/2 cup cold water
Whipped cream, for topping (optional)
Fresh fruit, for garnish (optional)

Preheat oven according to cake mix instructions. Grease and flour a 9×13-inch baking dish.

Prepare cake batter according to box instructions. Pour into prepared dish and bake as directed. Once baked, cool slightly.

While cake is warm, use a wooden spoon handle or skewer to poke holes evenly over the top.

In a small bowl, dissolve flavored gelatin in boiling water. Stir in cold water until fully combined.

Carefully pour gelatin mixture over warm cake, ensuring it fills the holes and covers the entire surface.

Refrigerate cake for at least 4 hours or overnight to allow gelatin to set and flavors to meld.

Once chilled, top with whipped cream and fresh fruit, if desired.

Slice and serve chilled.
