★Ingredients

2 tablespoons olive oil

1 whole chicken, cut into pieces

1 onion, chopped

4 cloves garlic, minced

1 bell pepper, chopped

1/2 cup tomato sauce

1 tablespoon oregano

1/4 cup vinegar or fresh lime juice

1 tablespoon thyme

2 bay leaves

1/2 teaspoon cumin

1 teaspoon paprika

1/4 cup olives (optional)

Salt and pepper to taste

1 cup chicken broth or water

Fresh cilantro for garnish

★Instructions

  1. Marinate the Chicken: In a bowl, mix chicken with vinegar (or lime juice), garlic, oregano, thyme, salt, and pepper. Let it marinate for at least 30 minutes or overnight for better flavor.
  2. Sauté Vegetables: Heat olive oil in a large pot or skillet over medium heat. Add the onions, bell pepper, and garlic. Sauté until soft and fragrant.
