Healthy Vegetable Patties

★Ingredients

1/2 cup all-purpose flour

3 eggs

1/2 cup water

1 zucchini, grated

1 carrot, grated

1/4 cup green onions, chopped

1/2 onion, finely chopped

Salt and pepper to taste

1/4 tsp garlic powder (optional)

2 tbsp vegetable oil for frying

1/2 tsp paprika (optional)

★Instructions

In a large bowl, beat the eggs until well combined.

Add flour, water, salt, pepper, paprika, and garlic powder, and mix until smooth.

Fold in the grated carrot, zucchini, onion, and green onions.

Heat a frying pan over medium heat and add 1 tbsp of vegetable oil.

Pour a ladle of the mixture into the pan and spread it out to form a thin pancake.

Cook for 2-3 minutes on each side or until golden brown and fully cooked through.

Repeat with the remaining mixture, adding more oil as needed.

Serve hot, rolled up or folded, as shown in the picture.
